Beef Enchilada Casserole

Ingredients

  • 1 lb 95% lean ground beef or turkey
  • 1 tbsp southwestern seasoning mix
  • 1/4 tsp salt
  • 1 10 oz an enchilada sauce
  • 3/4 cup water
  • 1/2 cup medium thick and chunky salsa
  • 12 6-inch yellow corn tortillas
  • 1/4 cup fresh cilantro
  • 1 cup shredded Colby and Monterey Jack cheese blend divided
  • Sour cream and lime wedges optional

Preparation

Step 1

1. Combine beef (or turkey), seasoning mix, and salt in skillet and cook over medium high heat 8-10 minutes or until beef is no linger pink, breaking beef into crumbles
2. Add enchilada sauce, water, and salsa to skillet
3. Bring to simmer and remove from heat.
4. As beef mixture cooks, place tortillas in a stack and cut into 1-inch pieces
5. Snip cilantro
6. Arrange half tortillas evenly over bottom of ovenware.
7. Top with ½ the beef mixture and ½ the cheese
8. Sprinkle 2 tbsp of cilantro over the cheese.
9. Top with remaining tortillas, beef, and cheese
10. Microwave bake on high 3-5 minutes or until cheese is melted.
11. Garnish with remaining cilantro
12. Serve with sour cream and lime wedges.
