Potato Pancakes

Ingredients

  • 2 Tbsp onion, peeled and finely chopped
  • 1 potato, peeled, grated and drained
  • 1 egg, lightly beaten
  • 1 Tbsp flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • oil for frying

Preparation

Step 1

Grate the potato and drain off all the moisture.
Chop the onion very fine.
Combine all ingredients, except oil.
Ladle the batter (about 1/4 cup) onto hot greased frying pan.
When the pancakes are nicely browned on one side, flip them over and brown the other side.
