Cheesy Spaghetti Bake

I've made this meal a number of times for neighbors and friends with new babies. It's been huge hit with everyone. You can get creative with this dish by making your own sauce or adding chopped spinach or broccoli with or instead of the meat.

You can also split the ingredients into two 9-inch pie dishes, if you prefer, and freeze one after cooking.

Ingredients

  • 12 oz. spaghetti make the whole 16 oz. pkg. and reserve 1/4 to serve plain for picky eaters if you have them
  • 2 Tbsp. butter
  • 1/3 cup grated Parmesan cheese
  • 2 eggs, beaten
  • 1 lb. ground meat (you choose) or meatless ground burger
  • 1 jar (26 oz.) red pasta sauce with mushrooms and garlic
  • 1 1/2 cups (12 oz.) nonfat ricotta
  • 1/2 cup shredded mozzarella cheese

Directions:

Preheat the oven to 350 degrees. Coat a 9 x 13 inch baking dish with nonstick cooking spray.


1. Break the spaghetti into thirds and cook it according to package directions until it is al dente. Drain the spaghetti, return it to the pot, and toss it with the butter, Parmesan cheese and eggs. Using a spatula, press the cooked spaghetti into the bottom of the baking dish.

2. Meanwhile, brown the meat in a large skillet over medium heat. Add the pasta sauce and remove it from the heat.

3. Spread the ricotta or cottage cheese evenly over the spaghetti in the baking dish. Top it with the meat mixture and bake it, uncovered, for 25 minutes.

4. Remove it from the oven, sprinkle the casserole with mozzarella cheese, and bake it for 5 more minutes. Cut it into squares to serve.
