Ingredients

  • 1 1/2 tsp. brown sugar
  • 1/2 tsp. kosher salt
  • 3/4 tsp. ground black pepper
  • 1 tsp. ground sage
  • 1 tsp. ground thyme
  • 1/2 tsp. dried marjoram
  • 1/4 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 1/8 tsp.-1/4 tsp. red pepper flakes
  • 1/2 pound ground turkey
  • 1/2 pound ground chicken
  • 1 1/2 tsp. worcestershire sauce

Step 1

Mix all seasonings. Add turkey, chicken and worcestershire sauce and combine with hands. Preferably, refrigerate overnight, up to two days.

Moisten hands with water and form mixture into balls. Flatten and shape into patties (err on the thinner side since they puff up). Fry patties in large skillet over medium-high heat with a little oil, 2-3 minutes per side. (Do not flatten sausage while cooking as it releases the juices that keep it moist.) My sausages are done at this point (165 degrees internal temperature) but if they are not ready, reduce heat to low and cover. Cook until no longer pink in center, cooking time will vary on thickness but do not overcook or they will be dry and tough.
