Boiled Raisin Cake

Ingredients

  • 1 cup raisins
  • 3/4 cup sugar
  • 1/2 cup vegetable shortening
  • 1 1/2 cups flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp salt
  • 1 egg

Preparation

Step 1

Boil raisins for 20 minutes in just enough water to cover. Drain, reserving 1/2 cup liquid.
Cream together sugar and shortening. Add flour sifted together with baking soda, cinnamon, nutmeg and salt. Add drained raisins, reserved liquid, and beaten egg.
Pour into greased and floured tube pan. Bake 45 minutes at 375°.
Grandma used a butter frosting: Cream together confectioner’s sugar and butter and a little milk and spread over top of cake.
