White Vanilla Cupcake Recipe

  • 2 eggs
  • 125 g unsalted butter, softened
  • 1 cup caster sugar
  • 1/2 cup milk
  • 2 cups SR flour SR = Self-rising flour
  • vanilla

Preparation

Step 1

Preheat the over to 160C. Line 12 cupcake pan with papers or a 7 inch round cake tin.
In a medium bowl, lightly beat the eggs, add butter, vanilla and sugar, then mix until light and fluffy.
Add milk and flour and mix to combine. Beat for 2 minutes until light and creamy.
Divide the mixture evenly between cupcake papers or pour into cake tin.
Bake cupcakes for 18-20 minutes or until cooked and firm to the touch.
Allow to cool completely.
