Grilled cheese isn't cheese wrapped in plastic between two pieces of bread that never mold. Make the perfect grilled cheese with this recipe using a Cheddar / Gruyere mix and artisan bread.

Ingredients

  • 1 pound Cheddar / Gruyere mix cheese (if you can't find this, use 1/2 pound good sharp cheddar and 1/2 pound Gruyere or swiss cheese)
  • 8 slices good french or artisan bread from the bakery
  • 8 tablespoons butter
  • 8 tablespoons mayonnaise

Step 1

Slice the cheese into about 1/4 inch slices.

Spread 1 tablespoon of mayonnaise on the outside side of each piece of bread. This is just a very thin layer to help brown the bread (and give the sandwich great flavor).

Layer the cheese slices on the inside of the bread, top with another piece of bread, mayonnaise side out.

Melt the butter on a griddle. I love to use my Opti-Grill for the best grilled cheese. When the butter is melted, add the sandwich, with the mayonnaise side of the bread out.

Brown on both sides. Then enjoy the gooey, cheesy sandwich!
