Key Lime Pie
- 3 egg yolks
- 1 14 oz. can sweetened condensed milk
- 1/2 tsp lime zest
- 1/2 cups lime juice
Bake pie crust (9 inch or larger). For filling, beat egg yolks with a whisk. Stir in milk and zest. Whisk in lime juice until combined and mix until thickened. To the mix add 1/2 cups whipping cream. If desired, add green food coloring. Mix well. Spoon into crust. Bake for 25 minutes. Filling is done when, lightly touched, it is firm. Cool 60 minutes. Cover and refrigerate 2 to 24 hours. Beat 1 cup of whipping cream with 1/2 cups sugar and 1 tsp vanilla. Put over pie. Decorate with lime slices if desired.
