Ingredients
- 1 cup zucchini, grated
- 1 1/2 cups whole wheat flour
- M cup sugar (or sugar
- substitute)
- 3/4 cup Unsweetened
- Applesauce
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 1/2 tsp. cinnamon
- 1 tsp. pure vanilla extract
- M cup dark chocolate
- or chopped nuts
Preparation
Step 1
1. Preheat oven to 350°F. Light grease 12 muffin tins with
oil or butter.
2. Combine zucchini, applesauce and sugar in a medium
bowl. Mix together the remaining dry ingredients
in a large bowl. Make a well in the dry ingredients and
add the wet ingredients into the dry, and stir until just
mixed.
3. Spoon batter into muffin cups until they are about Mrds
of the way full.
4. Bake for 20–22 minutes or until a toothpick comes out
clean, and cool on a wire rack before removing from
the tins.
