Ingredients
- 1 cup (2 sticks) unsalted butter at room temperature
- 1/4 cup minced fresh cilantro
- 1 Tbs. minced scallions
- 1 clove garlic, peeled, and pushed through a garlic press

The butter should be at room temperature, but not too soft. Butter is good on bread, as well as vegetables.
Put the butter in the mixer bowl. Attach the bowl and wire whip to the mixer. Turn the mixer speed to 6 and whip the butter for 1 minutes. Stop the mixer and scrape down the sides with a spatula. Add the cilantro, scallions and garlic. Turn the mixer to speed 2 for 30 seconds, then to speed 6. Whip the mixture for about 2 minutes, or until fluffy.
Put the butter in ramekins or butter molds and serve. Or, with a spatula, turn out the butter onto a sheet of plastic wrap. Form the butter into a log and wrap tightly in the plastic. Keep in the refrigerator for up to 1 week, or place in a resealable plastic bag and freeze for up to 1 month.
Makes 1 1/4 cups
Variations: Substitute equal quantity of parsley, chives, or chervil for the fresh cilantro.
