Ingredients
- Topping:
- 1/2 cup Oil
- 1 stick Margarine
- 1 cup Sugar
- 3/4 cup Light Brown Sugar
- 4 tsp Instant Coffee Granules
- 1 Tbsp Boiling Water
- 2 large Eggs
- 2 1/2 cups Flour
- 1/4 cup Cocoa Powder
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 1/2 cup Cappuccino Ships
- 1/2 cup Chocolate Chips
- 20 Coffee Candies, crushed
Preparation
Step 1
Preheat oven to 350.
Beat oil, margarine and sugars in a large mixing bowl. Dissolve coffee in boiling water and add to mixture. Beat until combined.
Add eggs and mix to incorporate. Add dry ingredients, mix just until combined. Stin in cappuccino chips if using and form into 1" balls. Place on a prepared baking sheet, spacing 1 1/2" apart. Bake 10 minutes and cool on rack.
Melt the chocolate chips and drizzle over cookies. Sprinkle with crushed candy. Chill to set.
