Lemon Cloud Pie

  • 1 cup flour
  • 1/3 teaspoon salt
  • 1/3 cup Crisco
  • 1 slightly beaten egg
  • 1 teaspoon grated lemon rind
  • 1 tablespoon lemon juice
  • 3/4 cup sugar
  • 1/4 cup cornstarch
  • 1 cup water
  • 1 teaspoon grated lemon rind
  • 1/3 cup lemon juice
  • 2 slightly beaten egg yolks
  • 2 egg whites
  • 2 tablespoon sugar
  • 4 oz cream cheese



Step 1

Sift together 1 cup flour, 1/3 teaspoon salt in mixing bowl and cut in 1/3 cup Crisco until blended
combine 1 slightly beaten egg, 1 teaspoon grated lemon rind and 1 tablespoon lemon juice
sprinkle over mixture while stirring with fork until dough is moist enough to hold together
if necessary add 1 or 2 tablespoon water
roll out on floured surface,
line pie pan and prick with fork
bake shell and pastry pieces at 350* for 12 to 15 minutes
cook over medium heat, sugar, cornstarch,water, lemon rind,lemon juice,and egg yolk
stir constantly until thick
remove from heat and add cream cheese
blend well
cool while preparing meringue
beat egg whites with sugar until soft mounds form
fold in lemon mixture
spoon in baked pie shell and sprinkle with crumbled pastry pieces
chill at least 2 hours or longer
