Patti's Roasted Red Pepper Potato Soup

Ingredients
- 4 large red peppers
- 1 medium onion(diced-about 1cup)
- 1 large russet potato, peeled and diced(about 1 1/2 cups)
- 3 cloves garlic
- 4 cups veg. or chicken stock
- 1/4 cup 35% cream or milk
- 3 tbsp. butter
- cayenne, salt and pepper to taste

Preparation
Step 1
Roast red peppers until blackened. Peel blackened area off. You can use jar of roasted peppers from costco.
Heat butter in a large pot over medium to high heat. Add chopped onion and saute for 2-3 minutes, stirring occasionally. Add the potatoes and cook another 2-3 minutes, then add garlic and peppers. Stir well and cook for 2 minutes.
Add the stock, stir well and bring to a simmer. Cook over medium heat until potatoes are soft.
Puree the soup in a blender until smooth. Return to a clean pot and set over low heat. Add cream stir well and taste. Add cayenne, salt,and pepper to taste.
Serves 4-6
