Ingredients

  • 4

    large red peppers

  • 1

    medium onion(diced-about 1cup)

  • 1

    large russet potato, peeled and diced(about 1½ cups)

  • 3

    cloves garlic

  • 4

    cups veg. or chicken stock

  • ¼

    cup 35% cream or milk

  • 3

    tbsp. butter

  • cayenne, salt and pepper to taste

Directions

Roast red peppers until blackened. Peel blackened area off. You can use jar of roasted peppers from costco. Heat butter in a large pot over medium to high heat. Add chopped onion and saute for 2-3 minutes, stirring occasionally. Add the potatoes and cook another 2-3 minutes, then add garlic and peppers. Stir well and cook for 2 minutes. Add the stock, stir well and bring to a simmer. Cook over medium heat until potatoes are soft. Puree the soup in a blender until smooth. Return to a clean pot and set over low heat. Add cream stir well and taste. Add cayenne, salt,and pepper to taste. Serves 4-6
