Ingredients

  • 1 1/2 c.melted butter
  • 1/2 c. Frozen concentrated orange juice
  • 2 c. white sugar
  • 2 beaten eggs
  • 4 teas. baking soda
  • 1/2 - 1 teas. orange zest
  • 1 teas. salt
  • 4 c. flour

Preparation

Step 1

Melt butter. Add sugar and frozen orange juice. Stir. Let cool.
Add eggs, baking soda, salt, orange zest. Stir after each addition.
Add flour slowly. Mix well.
Cover and refrigerate 2 - 3 hours or overnight.

Preheat oven 350 degrees. Rack in middle of oven.
Roll dough into walnut size balls. [These balls can be rolled in sugar before baking.] Place on greased cookie sheet about 2 or 3 inches apart. Press down slightly so balls don't roll.
Bake 10 - 12 minutes. Let cook 2 minutes on cookie sheet.
Remove to rack to finish cooling.

These cookies freeze well. Yield about 10 dozen.
