Chicken and Orzo

Ingredients
- 4 chicken breasts with skin and bone in (more flavor)
- 1/2 yellow onion, finely minced
- 2 tablespoon olive oil
- kosher salt
- black pepper
- 1/4 teaspoon red chili flakes
- 3 medium roma tomatoes, roughly chopped
- 2 cups chicken stock
- 1 cup orzo
- 1/4 pound freshly washed spinach leaves
Preparation
Step 1
In a dutch oven heat the olive oil. Add the onion and cook over medium heat until soft, about 2 minutes.
Add the chicken thighs. Sprinkle with some salt and pepper. Brown each side until golden, about 3 - 5 minutes per side, using medium heat.
Add the red chili flakes. Stir.
Add the tomatoes and chicken stock. Stir. Lower the heat to a low simmer. Cover and let cook for 30 minutes.
Add the orzo. Stir, then cover and let simmer for 8 minutes.
Turn of the heat of the stove and stir in the spinach leaves. Let the spinach wilt, this will only take about 1 minute.
Serve.
