Broccoli & Water Chestnut Casserole

A perfect broccoli side dish any time of year, with a little crunch from the water chestnuts and savory flavors from the cream of chicken soup.

Ingredients

  • 1 (10-ounce) package frozen broccoli pieces
  • 1/2 can sliced water chestnuts
  • 3/4 can cream of chicken soup
  • 2 tablespoons dry bread crumbs
  • 2 tablespoons Parmesan cheese, grated
  • 1 tablespoon butter, melted

Preparation

Step 1

In a 1 quart ungreased baking dish place frozen broccoli. Add the 1/2 can of water chestnuts. Spread the 3/4 can cream of chicken soup over the top.
Sprinkle the top with bread crumbs and Parmesan cheese. Melt butter and drizzle over top.

Place in a 350°F oven for 40-45 minutes.

Serves 4-5

You could also use mushroom soup for a vegetarian dish.
