Roasted Root Vegetables

Ingredients

  • 1 cup Butternut squash, diced
  • 1 cup Acorn squash, diced
  • 1 cup sweet potato, diced
  • 2 apples, diced
  • 2 pears, diced
  • 2 beets, diced
  • 1 cup baby carrots, halved
  • 1 red onion, sliced (add near end of cooking time)
  • Olive oil
  • salt & pepper
  • 2 Tbl melted butter
  • 2 Tbl maple syrup

Preparation

Step 1

Cook beets in a separate pan. Mix all other vegetables & fruit together. Coat all with olive oil and season with salt & pepper. Roast in one layer in shallow pan at 400 for 30-45 mins. Mix melted butter and maple syrup and pour over vegetables.
