Twice baked potatoes

- 4 large russet potatoes
- 3 tbsp butter
- 1 or 2 tbsp minced green onion
- salt, pepper, cayenne to taste
- 1/2 cup shredded white cheddar cheese
- 1/2 cup cream or milk
- 1 egg yolk
- 1 tbsp butter, melted
- 1 tsp paprika
- Preheat oven to 400°F and line a baking sheet with aluminum foil. Rub potatoes with a little vegetable oil and place on baking sheet. Bake for around 1 hour, or until the potatoes are tender. Let these cool for around 10 minutes.
Mix all ingredients and put back in potatoe. Bake 400 30 min.
