Garlic Mashed Potatoes

Ingredients

  • 1/4 cup unsalted butter
  • 8 garlic cloves, chopped
  • 1 1/4 cups half & half
  • 2 tsp. kosher salt
  • 2 lb. Yukon gold potatoes, peeled and cut into 1-inch pieces
  • 2 lb. russet potatoes, peeled and cut into 1-inch pieces
  • 1 cup sour cream
  • 1/4 cup chopped flat-leaf parsley
  • 1 tsp pepper

Preparation

Step 1

1. Melt the butter in a large saucepan over medium heat. Add the garlic and cook, stirring often, until fragrant, 2 to 3 minutes. Add the half & half and salt and simmer gently for 5 minutes. Remove from the heat.

2. Place the Yukon gold potatoes in a large saucepan, cover with salted water, and bring to a simmer over medium-high heat. Increase the heat to high; add the russet potatoes and bring to a boil. Reduce the heat to medium-low and simmer until all the potatoes are tender, 10 to 12 minutes.

3. Add the half & half mixture and sour cream to the potatoes; mash to the desired consistency. Top with the parsley and pepper.
