GERMAN POTATO SALAD

Ingredients

  • 1 lb Yukon Gold potatoes
  • 1 medium onion, finely chopped
  • White vinegar
  • Beef broth
  • Canola oil
  • Salt and pepper
  • Parsley
  • Bacon bits (optional)

Preparation

Step 1

Boil potatoes whole, peel and cube when cool.
Add vinegar, broth and oil to potatoes, to moisten.
Add onions,parsley and bacon, if desired, and toss gently.
