Oven-Roasted Salmon

Ingredients

  • DILL AND CAPER BUTTER:
  • 1 center cut salmon fillet (1-1/2 lbs)
  • 1 Tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 c butter, softened
  • 1 Tbsp minced shallot
  • 1 Tbsp minced fresh dill
  • 1 tsp Dijon mustard
  • 1 tsp chopped capers

Preparation

Step 1

Place a large oven-safe skillet in a cold oven. Preheat the oven to 450º.

Meanwhile, brush salmon with oil and sprinkle with salt and pepper.

Carefully remove skillet from oven. Place fish, skin side down, in skillet. Return to oven; bake salmon uncovered, 14-18 minutes or until it flakes easily and a thermometer reads 125º.

Mix Dill and Caper butter ingredients.

Cut salmon into 4 equal portions.

Divide the butter mixture among the fish fillets.
