Ingredients

  • 1/2

    cup chopped celery

  • 1/2

    cup choped onion

  • 2

    Tablespoons butter

  • 1

    cup rice, (uncle Ben's)

  • 2 1/2

    cups chicken broth

  • salt and pepper to taste.Don't add until you taste the rice after it's done different brands of chicken broth has different amounts of salt.

Directions

In a medium skillet melt butter, add the celery and onion and cook for about 1 minute. Add rice and stir to coat with butter and let brown a little before adding chicken broth. Add broth, bring to a boil, cover and turn down to simmer, set timer for 15 minutes, taste and if not cooked enough let cook for another 5 minutes. The rice is done when you see that the rice has absorbed the broth and small holes will appear on top, that tells you the rice is done.
