Deluxe Chocolate Pudding Cake

Ingredients

  • 2 tsp baking powder
  • 1/8 tsp salt
  • 3/4 cup sugar
  • 1/4 cup cocoa powder (heaping is good!)

  • 1/2 cup cream (I use Half & Half)
  • 1 tsp vanilla
  • 1 1/2 cups fresh brewed coffee (or water)
  • 1/4 cup cocoa powder
  • 3/4 cup brown sugar, packed

I remember having this chocolate pudding cake for dessert as a kid.  My mom would make it and we’d eat it all warm and gooey from the oven with scoops of vanilla ice cream or fresh whipped cream.  And I loved it, like LOVED it.  I mean it’s chocolate pudding AND chocolate cake all at the same time, so that’s pretty hard not to love.

What a treasure this book is.  I thought what better way to honour her book and all of her hard work to put it together, than to begin cooking her recipes for my family.  I decided to start with Grandma’s Deluxe Chocolate Pudding Cake…my kids minds are about to be blown!  Chocolate cake and chocolate pudding with whipped cream?  And on a weeknight?!  Whoa Nelly.  They’re going to love it.

Now before we get to the actual recipe let’s just talk about pudding cakes.  They’re kind of a weird dessert…weird but delicious.  Pudding cakes are made in 2 layers, the first layer is cake batter and the second layer is the liquid layer that will turn into the pudding.  It’s like strange dessert magic.  Chocolate cake batter + chocolatey liquid = Deluxe Chocolate Pudding Cake.  And trust me on this one, DO NOT mix the 2 layers.  It will work.  Believe me mmmmmkay

For this pudding cake I wanted to bump up the chocolate flavour, so I decided to play with the recipe just a little bit.  I know from past baking experience that coffee really elevates the chocolatey flavour of desserts, and without adding a strong coffee flavour.  So I added a cup and half of fresh brewed coffee to the recipe, instead of just hot water.  I know that it might seem strange, but it’s true…you don’t taste the coffee, you just taste rich chocolate flavour.  And if you’re worried about caffeine, just use decaf like I do.  For the extra rich flavour, coffee is really worth adding.

This rich and delicious dessert is so simple to make, you can even have it on a weeknight!  Basically 10 minutes to prepare, and 40 minutes to bake. In fact you could even put it in the oven just as you sit down for dinner, then it would be ready just as you’re finishing up.  Your family will think you’re a rockstar.  I hope you try this recipe and enjoy it as much as we did!

Preheat your oven to 350 degrees.

Layer #1
In a bowl whisk together the flour, baking powder, salt, sugar and cocoa.

Stir in the 1/2 cup cream and vanilla.

Spread mixture into an 8x8 pan.

Layer #2
In a separate bowl, stir together the coffee, cocoa powder and brown sugar.

Putting it all together:

Pour the coffee mixture over the cake batter, but DON'T STIR.

Place it in the oven and bake for 40 - 45 minutes.

Serve warm or hot with vanilla ice cream or whipped cream!
