Ingredients
- 1/4 c EVOO
- 1 shallot, minced
- 2 Tbsp white balsamic vinegar
- 1 Tbsp whole-grain Dijon mustard
- 1 bag (5 oz)salad greens
- 3 ribs celery, leaves torn and ribs thinly sliced on an agle
- 1 Granny Smith apple, thinly sliced
- 1/4 c fresh parsley

In large bowl, whisk first 4 ingredients; season. Toss with remaining ingredients; season.
