Kale Sausage and White Bean Soup

Ingredients
- Mild Italian Chicken Sausage with the cashing removed and diced into small bit size pieces - 5 sausages - 12 oz.
- 1 head of Kale diced into small pieces. Major stems removed before dicing.
- 2 cans of Cannellini beans.
- 1-2 boxes of Chicken Stock
- Diced chicken meat
- 2 medium garlic cloves
- Salt and Pepper to taste
- 2 diced onion

Preparation
Step 1
Heat olive oil in a Viking soup pot over medium heat. Add onions and cook until tender.
Add the garlic andcook together with the onion for a minute or so.
Add the beans and the kale to the pot along with red pepper flakes and salt and pepper.
Wilt the kale and make room for more if needed.
Add the chicken broth and sausage and chicken and cook together in the pot for 15 minutes on low heat.
Add an additional seasoning to taste.
Toast bread rubbed with garlic. Break bread into smaller pieces and finish on top of the soup. Drizzle with olive oil and serve.
