Tomato, Cucumber, Basil Salad

Ingredients

  • 1 medium cucumber
  • 1 cup grape or cherrie tomatoes
  • 2 ounces low-fat part-skim milk mozzarella cheese, diced
  • 1/4 cup chopped fresh basil
  • 1/2 teaspoon of extra virgin olive oil
  • Balsamic vinegar, to taste
  • Ground black pepper to taste

Preparation

Step 1

Peel and chop the cucumber. Place in a bowl and add the tomatoes, cheese and basil. lightly drizzle with olive oil, vinegar, and pepper. Toss and enjoy!
