Leftover Turkey Casserole

Ingredients

  • 4 cups leftover prepared stuffing
  • 4 cups coarsely chopped leftover turkey
  • 3/4 cup mayo
  • 1/4 cup whole berry cranberry sauce
  • 2 cups leftover mashed potatoes
  • 1 1/2 cups shredded low-fat mozzarella cheese

Preparation

Step 1

Preheat over to 375 degrees Fahrenheit.

Grease an 8 x 8 inch baking dish with non-stick cooking spray.

Spoon in 2 cups of stuffing, then top with turkey.

Combine 1/4 cup of mayo with cranberry sauce, spread evenly over turkey.

Combine remaining mayo, potatoes and cheese in a large bowl. Evenly spread on turkey, then top with remaining stuffing.

Bake 40 minutes or until heated through. Let stand for 10 minutes before serving. Garnish with dried cranberries.
