Lemon Bars

Light and fresh, a great treat for summer time.

Ingredients

  • CRUST:
  • 1 C butter, room temperature
  • 1/2 C powdered sugar
  • 2 C flour
  • dash kosher salt
  • FILLING:
  • 4 eggs, room temeperature
  • 1/2 C flour
  • 2 C sugar
  • 6 Tbl lemon juice, fresh squeezed

Preparation

Step 1

Preheat oven to 350 degrees

To make the CRUST:
combine all ingredients, mix well. Press into an 8 x 8" pan. Bake for 12-15 minutes, until set and slightly golden.

To make the FILLING:
Beat all ingredients together and pour over the baked crust.
Bake for 25 minutes or until set.

Cool, cut into squares and dust with powdered sugar.
