Garlic Parsnip Puree

Step 1

Bring 2 cups half and half, 1 cup water, 3 pounds sliced peeled parsnips, 4 sliced garlic cloves, 2 tablespoons butter and 2 teaspoons kosher salt to a boil in a medium saucepan. Reduce the heat to medium low; cover and simmer until the parsnips are soft, about 8 minutes. Uncover and simmer until the liquid thickens, about 4 minutes. Puree until smooth.
