Ingredients
- Crust:
- 1 C all purpose flour
- 1/4 tsp kosher salt
- 1/4 C granulated or powdered sugar
- 1/2 C unsalted butter (COLD) cut into 1/2" cubes
- Filling:
- 3/4 C chopped pecans (or walnuts)
- 3/4 C chocolate chips
- 6 Tbls all purpose flour
- 1 tsp vanilla
- 1 Tbl bourbon
- 1/4 tsp kosher salt
- 1 lg egg yolk
- 1 lg whole egg
- 1/3 C sugar
- 1/3 C dark brown sugar
- 6 Tbls butter, unsalted
Preparation
Step 1
Heat oven to 350 degrees. Line an 8 X 8" pan with parchment paper.
To make the CRUST:
Combine flour, salt and sugar in a food processor with butter. Pulse until dough forms a ball.
Press dough into the prepared pan and press evenly to cover the bottom of the pan and 1/4" up the sides.
Bake for 15 minutes, until very pale golden brown.
To make the FILLING:
Melt the butter, then transfer to a large bowl, set aside to cool.
When cool, whisk the sugars into the butter smooth, add whole egg, mix until blended then add the additional yolk, salt bourbon and vanilla. Stir in flour until combined. Mix in chocolate and nuts.
Pour over the baked crust spreading evenly. Sprinkle lightly with sea salt before baking (if desired)
Bake for 20 - 25 minutes until top is firm and golden.
Bars are easier to cut when almost completely cooled. Store covered at room temp up to 3 days or in the fridge for longer.
