ButterMilk Biscuits

Ingredients

  • 2 cups flour
  • 1/4 teaspoon baking soda
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 6 tablespoon butter VERY COLD CUT INTO SMALL PIECES
  • 1 cup buttermilk

Preparation

Step 1

Combine the dry ingredients in a bowl
cut the butter into the flour until it resembles course meal
add just enough of the buttermilk to the mix JUST until combined
if it appears on the dry side add a bit more buttermilk
you should have very wet an sticky dough
Turn the dough out onto a floured board
DO NOT ROLL WITH A ROLLING PIN
instead gently pat the dough our until it is about 1/2 inch thick
fold the dough about 5 times
gently press the dough down to about 1 inch thick
use a round cutter to cut into rounds
once you have rounds you can gently knead the left over scraps together to make a few more biscuits
place the biscuit on a cookie sheet
make sure they are touching
if they are not touching they will not rise
brush top with melted butter
bake for 10 to 12 minutes or until biscuits are light golden brown
hint keep flour in freezer
have cold butter and cold butter milk
