Kielbasa, Kale, Bean, Tomato Soup

Ingredients
- 1 Tbl. olive oil
- 1 clove of garlic
- 1 onion - diced
- 3/4 lb kielbasa -sliced
- 4 cups kale
- 1 carton (32 oz) chicken stock/broth
- 2 cans(15 oz each) cannellini beans
- 1 can(15 oz) diced tomatoes
- 1/2 cup almond milk

Step 1
Heat 1 Tbl. of olive oil, clove of garlic, 1 onion and kielbasa(¾ pound) until onion is translucent
Add kale(4 cups) and heat through until it is wilted
Add chicken stock/broth (32 oz)
Heat to a boil
Add 1 can(15 oz) of cannellini beans and 1 can (15 oz) of diced tomatoes
Simmer for 10-15 minutes
Add 2nd can of white beans (smashed with ½ cup almond milk)
Heat through and Serve!
