- 1 1/2 cups dried chickpeas or 3 cans chickpeas rinsd
- 3 TBS EVOO
- 2 large onions chopped
- 4 garlic cloves chopped
- 1/2 cup white wine
- 4 cups vegetable broth
- 1 bunch of broccoli stems removed cut into small florets
soak peas overnight drain water
Heat oil in large pot add onions, garlic until onions are soft 10-15 mins.
Add chickpeas and wine. Bring to rapid simmer, cook until wine is reduced by half (2 mins)
Add broth, bring to boil, reduce heat, cover until chickpeas are very soft 1 1/2-2 hours (30 mins for canned peas) - season with salt
working in batches puree chickpeas mixture, add small amounts of water as needed until smooth.
