Cheesey Corn Casserole

Ingredients

  • 1 jalapeno pepper, chopped (remove seeds for less spice)
  • 2 cloves garlic, chopped
  • 2 cans corn
  • 8 oz block cream cheese
  • 2 Tbl butter
  • Large handful grated cheddar and Parmesan
  • 1/2 Cup breadcrumbs
  • 1/2 Cup Parmesan (additional)
  • Handful of chopped herbs (thyme, sage, etc.)
  • salt and black pepper, to taste

Preparation

Step 1

Preheat oven to 375 degrees.

Sauté jalapeño and garlic in a saucepan or small pot (anything with high sides that fits two cans of corn works) until they’re fragrant and just starting to soften. Add corn cream cheese, butter, and cheese, and stir through until it’s melted. Season with salt and cracked black pepper. Taste to see if it needs more cheese. Pour into a baking dish, sprinkle with a half cup of breadcrumbs, about a half a cup of Parm and herbs.

Bake until the cheese is melted and bubbling, about 15 minutes.
