Braised Bottom of the Round

Flavorful Pot Roast

Ingredients

  • 2 tbs butter or margarine
  • 2 tbs salad oil
  • 1 bottom round roast
  • 2 med onions
  • 1 clove garlic minced
  • 1/2 cup cooking wine (used 1/4 c cooking sherry)
  • 2 10 3/4-ounce cans beef consomme (or 2 cans beef broth)
  • 2 cups water (optional)
  • 2 tsp flour (may add 1 more tablespoon if you add extra water)
  • 2 tbls butter
  • 1/2 C sour cream
  • 1/8 tsp pepper

Preparation

Step 1

Heat oil in large heavy pan
Brown Meat on both sides
Add oinions, garlic, wine, consomme and pepper
Cover and cook slowly 2 1/2-3 hours or until fork tender
Remove meat and keep warm
Combine butter and flour and blend into smooth paste
Stir into boiling pan liquid
Just before serving fold in sour cream

Additional Vegetables (oven baked) for 1 hr. 15 min approx.
potatoes, carrots, onions - use some of pan liquid drizzled over while baking covered
