Ingredients
- 2 tablespoon EVOO
- 4 garlic cloves, minced
- 1 onion, chopped
- 2 celery, chopped
- 1 cup green & red pepper combined, chopped
- 1 bunch green onions
- 3 cups cauliflower grated in food processor
- 1 teaspoon dried thyme
- 1 bay leaf
- 1/2 teaspoon salt and pepper
- 1/4 teaspoon chili powder
- 1/2 teaspoon cumin
- 2 cup chicken stock

Note: Instead of using cauliflower, you can use Wild Rice blend (buy at the health food store) - 1 cup rice, 2 cups chicken broth.
