Fluffy Citrus Pancakes

  • 1/2 C all purpose flour
  • 1 1/2 t baking powder
  • 1/2 t baking soda
  • 1/2 t grated orange zest
  • 1/4 t salt
  • 3 T sugar
  • 3/4 C milk
  • 1/2 C fresh orange juice
  • 1 C ricotta cheese
  • 4 T butter melted and cooled
  • 1 large egg
  • 1/4 t vanilla
  • Maple Syrup, powdered sugar is optional

Step 1

In a large bowl combine flour, baking powder, baking soda, orange zest, salt and sugar. Set aside.

In a separate bowl whisk together milk, orange juice, ricotta, 4 T melted butter, egg and vanilla.

Make a well in the center of the flour mixture; pour the ricotta mixture into the well. Stir together gently just until combined (batter should be lumpy). Do not over mix.

Coat a nonstick griddle or large nonstick sauté pan with nonstick cooking spray. Place over medium heat. For each pancake, spoon 1/4 Cup of batter onto griddle. When bubbles appear, flip the pancakes gently and cook until lightly browned. Transfer to a warmed plant. Continue with remaining batter. Drizzle pancakes with maple syrup and sprinkle with powdered sugar if desired. Serave
