I don’t know if I will ever be sick of pumpkin desserts. I could honestly eat them year round. But I’m excited to share my most favorite pumpkin recipe.. White Chocolate Cheesecake Pumpkin Cookies. I’m telling you they will change your life. Literally a fall explosion in your mouth with every bite. They are easy to make and perfect for any fall get together… or to just eat by yourself ?
Preheat oven to 350 degrees F.
Line a cookie sheet with a non-stick cookie mat.
In a large bowl combine flour, sugar, brown sugar, baking soda, and salt until fully incorporated.
In a medium mixing bowl, combine butter, egg, cream cheese, vanilla, and pumpkin puree with a hand mixer, until fully incorporated.
Pour the wet ingredients into the dry ingredients and mixing as you go, until it is fully combined.
Fold in the white chocolate chips
Scoop out cookie dough balls with a cookie scoop and place on baking mat.
Bake for 10 minutes or until the bottoms are golden brown and the center in no longer doughy. Enjoy warm.
