Creamy Broccoli and Cheddar Soup

Ingredients
- 3 T butter
- 1 onion chopped
- 2 garlic cloved minced
- 1 1/2 lb broccoli cut inc stalks, separated
- 4 cups chicken broth
- 1 c heavy cream
- 1/4 t nutmeg
- 12 oz mild shredded cheddar
- cayenne pepper
- salt

Preparation
Step 1
melt butter in dutch oven over medium heat. add onion and cook 5 min. add garlic and cook 30 seconds. add broccoli stalks and cook till soften about 5 min. stir in broth and up heat to medium high simmer till stalks are tender about 5 min. add cream, nutmeg, and florets. simmer till tender about 5 min.
working in batches puree till smooth. simmer in pot over medium heat. stir in cheddar till melted and season with salt and cayenne. top with a little more cheddar.
