Roasted Brussels Sprouts and Sweet Potatoes

  • 1 lb. Brussels sprouts
  • 3 cups peeled cubed sweet potatoes
  • 1 cup chopped onion
  • 2 tbsp olive oil
  • 1 tbsp orange juice
  • 1/4 tsp ground cinnamon
  • 1/2 cup chopped walnuts
  • 1/2 cup dried cranberries



Step 1

Preheat oven to 400. Spread Brussels sprouts, sweet potatoes and onions on a baking sheet.
In a small bowl mix oil, orange juice and cinnamon, drizzle over veggies and toss, add salt and pepper
Roast for 15 minutes, stir and add walnuts and roast until veggies are tender. Add cranberries and serve
