Dark & Stormy Rum Cake

This glorious Dark and Stormy Rum Cake is the cure-all for a chilly evening. It will have you dreaming of warm, sandy beaches, especially with it’s namesake drink to accompany. It’s best to let this sit overnight to allow the flavours to really soak in, if you can manage to stay away that long.

Ingredients
- For the Cake:
- 2 cups all-purpose flour
- 1/4 cup cornstarch
- 3/4 cup brown sugar
- 3/4 cup white sugar
- 3 teaspoons baking power
- 1 tsp salt
- 1 tsp ground ginger
- 5 eggs
- 1/2 cup vegetable oil (plus extra for greasing pan)
- 1/2 cup dark spiced rum
- 1/2 cup Bundaberg Ginger beer
- 1/2 cup whole milk
- 2 Tablespoons lime juice
- 1 Tablespoon fancy molasses
- For the Rum Glaze:
- 1/2 cup melted unsalted butter
- 1/2 cup packed brown sugar
- 1/4 cup Bundaberg Ginger beer
- 1/4 cup dark spiced rum
- pinch of salt
- pinch of ginger
Preparation
Step 1
Sift together all dry ingredients in mixer bowl. Combine all liquid ingredients in another bowl. Add half of liquids to dry and mix with an electric or stand mixer on low for about 2 minutes, or until smooth. Add remaining liquid ingredients and continue mixing on low another minute until smooth again. Pour into greased pan and tap a few times on counter to remove air bubbles. Bake at 350 for 40-50 minutes, or until toothpick inserted comes out clean. Allow to cool in pan 10 min. While cake is cooling, put rum glaze ingredients into small saucepan and warm over medium, until sugar is dissolved. Using a spatula or knife, gently loosen the edges of the cake and invert onto serving plate. Poke all over with a toothpick. Don’t be shy- this helps the glaze really absorb into the cake. Take a dry pastry brush and remove any crumbs. Now for the glazing! Load a pastry brush with the rum glaze and go to town! Take your time and try to make sure every delicious inch is covered as evenly as possible, until all the glaze is done. Wrap tightly with plastic wrap and allow to sit overnight, or at least an hour to allow the cake to absorb the rummy goodness. Enjoy!
