White Asparagus with Hollandaise Sauce

Ingredients

  • 1 pound asparagus
  • 1 stick butter
  • 1/2 cup heavy cream
  • 4 egg yolks
  • 1 tablespoon lemon juice
  • 1 tesspoon dry mustard
  • 1 teaspoon salt
  • pinch cayenne pepper

Preparation

Step 1

Aspoaragus
1. Peel the asparagus and blanch in boiling salted water until tender. remove and plunge into ice-cold water.

Hollandaise
1. Melt butter in microwave oven.
2. Add heavy cream to butter and whisk.
3. Add remaining ingredients and whisk.
4. Place in microwave oven for 1 minute with power level set on 4. When done whisk and repeat until smooth and thick.
5. Reheat the aspaaragus in a steamer or in boiling water. Serve with the hollandaise sauce on top.
