Ingredients
- 4 or 5 egg whites
- 3/4 tsp. vanilla extract
- 1/4 tsp. cream of tartar
- 1/3 c. water
- 1 c. sugar
- 1/8 tsp. salt
Preparation
Step 1
Place egg whites in a large bowl. Add vanilla, cream of tartar and 1/8 tsp. salt.
Beat with a mixer at high speed until soft peaks form.
Combine 1 c. sugar and 1/3 c. water in a saucepan and bring to a boil.
Cook without stirring, until it registers 250 degrees.
Gradually pour hot sugar syrup in a thin stream over egg whites, beating at medium-low speed, then at high speed until stiff peaks form.
Spread over pie, etc. and then place pan on middle rack of preheated oven. Broil 1 1/2 minutes or until meringue topping is toasted and golden broan. Let stand 5 minutes.
