FRESH BANANA PUDDING WITH SESAME BRITTLE

Ingredients

  • For the brittle:
  • 3/4 cup sugar
  • 1/4 cup honey
  • Pinch of salt
  • 1/4 teaspoon of ground nutmeg
  • 1 Tbsp water
  • 1 cup toasted sesame seeds
  • 1 teaspoon of vanilla extract
  • 2 teaspoons butter
  • 1/4 teaspoon of baking soda
  • For the pudding:
  • 1 cup granulated sugar
  • 1/3 cup cornstarch
  • 4 cups whole milk
  • 4 large egg yolks
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter
  • 1/4 teaspoon cream of tartar
  • 1 cup heavy cream and 1 tablespoon confectioner's sugar (or Reddi Wip)
  • 2 medium-ripe bananas
  • kitchen tools: parchment paper or silpat silicone liner, baking sheet

Make the brittle: add the sugar, honey, salt, nutmeg, and water into a small (1½ quart), thick-bottomed saucepan. Heat on medium heat and stir until a smooth slurry is formed. Stir in the sesame seeds.
Let the sesame seed mixture simmer, stirring often, until the mixture turns an amber caramel color, about 5 to 10 minutes (if using a candy thermometer, check to see that the mixture has reached 300 degrees F).
Remove the pan from the heat and stir in the vanilla extract and the butter. Once the butter has completely melted into the mixture, stir in the baking soda. The mixture will foam up after you stir in the baking soda.
Pour the mixture out onto a silpat or parchment-paper lined baking sheet and spread it out thinly with a spatula, working as quickly as possible. Let the brittle cool for at least 20 minutes, then crack with the back of a knife to make little pieces.
While the brittle is cooling, make the custard. Whisk ¾ cup of the sugar, the cornstarch, milk and egg yolks in a pot set over medium heat, and cook, stirring constantly, until it just begins to bubble, 10 to 15 minutes. Turn heat down slightly, and allow mixture to simmer, still stirring constantly, for 1 minute, then remove mixture from heat. Whisk in vanilla, salt and butter and let cool.
In a small bowl, mash one of the bananas. Mix in the banana with the custard. Slice the other banana into rounds.
If making whipped cream, beat confectioner's sugar and heavy cream together at high speed in a large bowl until stiff peaks form.
Spoon the pudding into small cups and top with sliced bananas, whipped cream and shards of sesame brittle.
