Ingredients

    C flour

    C sugar

    t lemon rind

    t orange rind

  • 1/2

    t lemon rind

    C heavy cream

  • 2 1/2

    Lbs.cream cheese

  • 1 3/4

    C sugar

Directions

For Crust: Mix first 3 ingredients then cut in butter and add vanilla, egg yolk and chill. Roll out 1/3 of mixture between wax paper to 9 1/2". Place on spring form pan bottom & trim. Bake 400 about 10" until golden and cool. Grease sides of pan and fit over base. Roll out rest of mix to 15X4", cut in half lenghtwise and line sides patch as necessary. For Filling: Beat cream cheese at room temp at high speed until fluffy. Add sugar through salt and beat well. Add eggs and egg yolks, one at a time mixing well then stir in cream. Turn into pan & bake 500 for 12" until golen. Reduce heat to 200-235 for 1 hour and 20". Turn oven off, open door and allow to cool slowly in oven until warm to touch. Remove away from draft. Allow at least 12 hours to meld flavors.
