Red Cabbage

Ingredients

  • 3 pounds red cabbage, cored and shredded
  • 1 1/2 cups beef stock
  • 1/2 cup firmly packed brown sugar
  • 1/2 cup cider vinegar
  • 4 tablespoons (1/2 stick) butter
  • 1/4 teaspoon freshly ground black pepper
  • salt to taste

Preparation

Step 1

Combine all the ingredients, except the salt, in a 10 to 12 quart stainles-steel pot. Bring to a boil, stir, cover and simmer over low heat, stirring occasionally, 1 hour and 15 minutes. Add salt to taste.
