Ingredients
- 1 T butter
- 1/4 cup flour
- 1 cup milk
- 1 cup chicken stock
- 1 T dijon mustard
- 4 cups shredded sharp cheddar cheese, divided (3.5 cups / .5 cup)
- 2 cups shell pasta, cooked

Preparation
Step 1
Melt butter in pan. Add flour and wisk, about 3 minutes to make a rue.
Add milk and chicken stock, stirring and simmer, stirring often, about 20 minutes to thicken.
Add in mustard.
Add 3 1/2 cups shredded cheddar, stirring to melt cheese and blend.
Add cheese mixture to cheese. Top with additional 1/2 cup shredded cheddar.
