Balsamic Glazed Crock Pot Vegetables

Ingredients

  • 2 purple onion (large, coarsely chopped)
  • 1 pound parsnips
  • 1 pound carrots
  • 1 1/2 pounds sweet potatoes
  • 3/4 cups dried cranberries (sweetened)
  • 3 tablespoons olive oil
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons light brown sugar
  • 1 teaspoon salt
  • 1/2 teaspoons freshly ground pepper
  • 1/3 cups fresh parsley

Preparation

Step 1

Spray the inside of the slow cooker with cooking spray.

Chop onions, parsnips, and carrots into 1 1/2-inch pieces and add to the slow cooker.

Add cranberries, and stir all the vegetables together to combine.

Cut sweet potatoes into 1 1/2-inch pieces and place them on top of the other vegetables.

In a separate bowl, stir together the oil, balsamic vinegar, brown sugar, salt, and pepper. Pour the mixture over the vegetables.

Cover and cook on high heat for 4-5 hours. Top with fresh parsley and serve.
