Ingredients

  • 2 quarts of beets-small to medium
  • 2 cups water
  • 2 cups white sugar
  • 2 cups white vinegar
  • 1 tsp. allspice
  • 1 tsp. ground cloves
  • 1 tbsp. ground cinnamon
  • 1 lemon- thinly sliced

Preparation

Step 1

Boil beets in a large pot of water until tender-30-45 min.
Drain and cut larger beets into quarters. Return to large pot.

While beets are cooking -
Combine all other ingredients in another pot and bring to a boil
Prepare 3-5 pint jars- sterilize and set in hot water.
Prepare lids and rings- place in a container and pour boiling water over them.
When pickling brine is boiling, remove from heat and pour over cut up, cooked beets.
Simmer for 15 minutes.


Pack beets into the hot jars, cover with brine and top with slice of lemon.
Wipe top edges of jar with a clean cloth.
Put lids and rings on, tighten rings.
Jars should self seal in 1-2 hours
